Detoxifying Salsa Verde

Please tell me mamas, your days revolve around what you’re cooking and making food that is healthy and nutritious? And ofcourse all of those things in between.

✅filling orders
✅breast feeding
✅kissing boo boos
✅planning and business admin stuff
✅play with the kids
✅house tidying

Right? And these are just a few things throughout the day. As I type them out, it’s a reminder that we’d have no dishes if we didn’t have good food to eat. We’d have no laundry to do if we didn’t have clothes to wear. We’d have no orders to fill if we didn’t have customers. There would be no breast feeding without a precious little toddler. There’d be no homeschool if we didn’t have the option to do so. In a world where we are bombarded by negativity and go go go, this checklist reminds me where my important work is.

And also, the more I’m home, the more I want to be here, with my people.

Last night, I made tacos. Easy enough! We do this weekly actually. It’s a go to. I’ve been incorporating cilantro in our diet regularly, due to its ability to bind to heavy metals in our bodies and flush them out, it’s a no brainer.

 I’d use Celtic Sea Salt or Baja Gold Salt for an extra health boost. Man oh man, unbelievably delicious! We paired it with Siete tortilla chips. There are few if any tortilla chips on the market that use healthy oils in their chips. Most of what you’ll find are tortilla chips with ultra processed oils like sunflower, canola, and safflower. These highly processed oils destroy your metabolic function, we’re talking mitochondria here, the absolute power house of your cells. These ultra processed oils will speed up your aging process and bog down your immunity. Yes, they do cost more, but dang how many do you need to eat honestly? These are a treat for us and soooooo good! 

Here’s the recipe: 

 

9 medium tomatillos

1 small yellow onion, diced

1 jalapeño pepper devained and sliced into quarters.

4 garlic cloves

Avocado oil for drizzling

2 tablespoons or so of fresh lime juice

1 bunch of cilantro soaked and rinsed.

1.5 teaspoons of Celtic sea salt or Baja Gold Salt salt for an extra health boost, or salt of your choice

You are going to dehusk the tomatillos and wash them off. Then you’re going to roast them with the onion, garlic, and jalapeño by drizzling with avocado oil and sprinkling them with salt. Roast until the tomatillos are juicy. Once done, remove from the oven and let everything cool.  Once cool place the toasted goodies in a vitamin or food processor along with the cilantro and fresh lime juice. Pulse until mixed. Enjoy!
